Edible peanut protein hydrolysates were produced upon oil extraction from peanuts using an aqueous extraction process assisted by the enzyme alcalase 2.4 L . The study employed optimal conditions, including a pH of 8.5, a temperature of 60 °C, an enzyme content of 1.5%, and an 8 h incubation period, which resulted in an oil yield of 91.7 ± 1.
